Gluten-Free Creamed Corn

Flour is commonly a thickener in creamed corn, so canned versions are not gluten free. Here’s a recipe to make your own gluten-free creamed corn.

Ingredients

  • 3 cups cooked sweet corn kernels (or 16 ounces frozen corn kernels)
  • ½ cup heavy cream
  • 3 tablespoons butter
  • 1 teaspoon sugar (or more, to taste)
  • salt and pepper, to taste

Instructions

  1. Melt butter in large skillet over medium heat.
  2. Add corn and stir to mix well. (If using frozen kernels, sauté until corn is thawed before adding other ingredients.)
  3. Pour in heavy cream, sugar, salt and pepper. Continue cooking, stirring constantly, for about 10 minutes or until sauce is thick.
