
Fourth of July falls on a Wednesday this year, which makes it confusing about when to celebrate. As I mentioned last year, this is one of my favorite holidays, so I vote we celebrate this weekend, midweek AND next weekend. Who’s with me?
And by celebrate, I mean cookouts, barbecues, potlucks, parties or whatever you want to call them – they all involve tasty food. Here are a few Fourth of July recipe ideas for your celebration, divided into three categories: seasonal recipes, utilizing all the zucchini, green beans and tomatoes exploding in our gardens; cool recipes, since much of the country is experiencing record-breaking heat; and patriotic recipes – the red, white and blue variety.
In-Season Recipes
Spinach Salad With Raspberry Vinaigrette: Just store the salad and dressing in separate containers for a portable, flavorful salad potluck dish.
Zucchini, Corn and Tomato Salad
Bacon-Wrapped Green Bean Bundles
Chocolate Zucchini Bread: This chocolate twist on classic zucchini bread is on my list of recipes to make for the Fourth of July weekend.
Cool Recipes
Gazpacho: This recipe is one of our summer favorites, though if you’re looking for something a little different, we also have a recipe for Watermelon Gazpacho.
Red, White and Blue Recipes
Red, White and Blue Potato Salad: This recipe comes from Potato Goodness – though you can certainly add purple Peruvian potatoes and red potatoes to our Horseradish Potato Salad.
Grilled Chicken Thighs With Blueberry Salsa: The antioxidant-filled red bell pepper and blueberries combine for a tasty salsa to top any grilled meat.
Mixed Berry Pie: I made this last weekend, substituting strawberry jam and lemon juice for the red currant jelly. Add a lattice crust, and serve with vanilla ice cream!
