Ratatouille Recipe by Georgia Grown Chef

Chef John Szymanski works in recipe and new program development for the Kroger Company. Szymanski is a Certified Executive Chef and Certified Executive Chef Administrator with the American Culinary Federation.

The Georgia Grown Executive Chef program promotes and fosters relationships between chefs and farmers. The chefs involved in the program cook with locally grown products, allowing consumers a way to find “Georgia Grown” in their communities. This, in turn, creates a support system for local, seasonal foods.

Ratatouille by John Syzmanski Ratatouille recipe
Yield: 20 servings

8 ounces olive oil
1 cup Vidalia onion, diced
2 pounds Georgia Grown green peppers, diced
1 pound Georgia Grown tomatoes, deseeded and diced
2 pounds Georgia Grown eggplant, diced
2 pounds Georgia Grown zucchini, diced
½ bulb garlic, pureed
1 cup tomato puree
1 tablespoon red wine vinegar
salt and pepper, to taste

  1. Saute all ingredients together in olive oil.
  2. Season, cover and cook until vegetables are tender.
