Ingredients
- 4 yellow squash, sliced
- 4 zucchini squash, sliced
- 4 tomatoes, quartered (Roma tomatoes work well)
- 2 onions, quartered
- 8 ounces fresh mushrooms, sliced
- 1 ½ cups shredded Parmesan cheese
- 2 tablespoons Italian seasoning
- salt and pepper, to taste
Instructions
- Toss all ingredients together and place in a 9- by 13-inch dish.
- Microwave on high until vegetables are of desired tenderness, or bake at 350 degrees until desired tenderness.
