Ingredients

  • 4 yellow squash, sliced
  • 4 zucchini squash, sliced
  • 4 tomatoes, quartered (Roma tomatoes work well)
  • 2 onions, quartered
  • 8 ounces fresh mushrooms, sliced
  • 1 ½ cups shredded Parmesan cheese
  • 2 tablespoons Italian seasoning
  • salt and pepper, to taste

Instructions

  1. Toss all ingredients together and place in a 9- by 13-inch dish.
  2. Microwave on high until vegetables are of desired tenderness, or bake at 350 degrees until desired tenderness.
