Parfait is French for “perfect,” and so is this dessert, layered with blueberries, peaches and mascarpone cream.

Ingredients

Mascarpone Cream:

  • ½ pound mascarpone
  • ½ cup heavy whipping cream
  • ¼ cup sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In mixer with whisk attachment, beat the mascarpone until creamy.
  2. Add whipping cream, sugar and vanilla.
  3. Beat until thick and mixture stands in peaks.

To assemble:

  1. In tall stemmed glasses, mix peaches and blueberries and layer alternately with the mascarpone cream.
  2. Garnish with a sprig of mint leaves.
