Ingredients
- 11 ounces (1 box) lemon-flavored wafers
- ⅓ cup butter, melted
- 28 ounces (2 cans) sweetened condensed milk
- ½ cup fresh lemon juice
- 1-2 teaspoons lemon zest
- 1-3 drops red food coloring, optional
- fresh raspberries and mint, for garnish
Instructions
- Heat oven to 350 degrees.
- Process lemon wafers into fine crumbs using a food processor, or place wafers in a zip-close bag and crush with a rolling pin. Mix wafer crumbs with butter and press into an 8-by-8-inch baking dish. Bake for about 10 minutes, until golden. Set aside to cool.
- In a large bowl, stir together sweetened condensed milk, lemon zest and lemon juice. The more it is stirred, the thicker it will become. Add food coloring if desired. Spoon evenly into cooled crust.
- Refrigerate to set. Cut into squares and garnish with fresh raspberries and mint leaves when ready to serve.
