Ingredients
Cupcakes
- 1 cup butter
- 1 ¾ cups sugar
- 2 large eggs
- 2 teaspoons vanilla
- ¼ cup cocoa powder
- 1 teaspoon baking soda
- 1 cup RC Cola
- ½ cup buttermilk
- 2 cups all-purpose flour
Topping
- ½ cup butter
- 2-4 tablespoons RC Cola
- 3-4 cups powdered sugar
Optional Garnishes
- ½ cup miniature marshmallows
- ½ cup walnuts, chopped
Instructions
- Heat oven to 350 degrees. Line cupcake tin with 24 liners.
- In a large bowl, cream together butter and sugar. Whisk in eggs, vanilla, cocoa powder and baking soda.
- In a separate bowl, combine RC Cola and buttermilk. Add alternately with flour to butter mixture until just combined. Spoon into cupcake liners, filling two-thirds full.
- Bake for 15 to 20 minutes, until tops spring to the touch. Set aside, and quickly prepare topping.
- For topping, whisk together all ingredients and spoon on top of cupcakes. Garnish with walnuts and marshmallows, if desired. Allow to set before serving.
