Strawberry Lemon Shortcakes

The tasty combination of strawberries and lemon comes together in these sweet biscuits.

Ingredients

  • 4 cups strawberries, sliced
  • ½ cup sugar
  • 1 teaspoon lemon zest
  • ¼ cup lemon juice
  • ¼ teaspoon rose extract, optional

Lemon Biscuits

  • 2 cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • 1 teaspoon lemon zest
  • ½ cup cold butter
  • ¾ cup buttermilk

Whipped Cream

  • 1 cup cold cream
  • 1 teaspoon vanilla extract
  • 4 tablespoons sugar

Instructions

  1. In a large bowl, combine strawberries, sugar, lemon zest, lemon juice and rose extract well, and cover. Refrigerate for several hours to draw out the berry juice.
  2. To make lemon biscuits, heat oven to 400 degrees.
  3. Combine flour, salt, baking powder, sugar and lemon zest in a medium bowl. Grate the butter into the flour mixture and stir until it is uniformly lumpy. Stir in milk until just combined. Pat gently onto a floured surface.
  4. Using a large biscuit or cookie cutter, cut 6 biscuits. Bake for 15 minutes. Allow to cool.
  5. To make whipped cream, whip the cold cream quickly using a beater or stand mixer. Add vanilla and sugar and combine until smooth.
  6. To prepare shortcakes, slice each cooled biscuit in half. Spoon berries onto the center. Top with whipped cream and more berries, the other biscuit half, and then repeat whipped cream and berry topping to garnish.
