Nashville Style Hot Chicken

Ingredients

  • 48 ounces chicken breasts, with or without skin
  • 2 cups buttermilk
  • ½ cups self-rising flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • frying oil (canola or peanut are best)
  • white bread or buns
  • butter pickles

Hot Chicken Paste

  • 3 tablespoons lard or bacon grease
  • 2-3 tablespoons cayenne pepper
  • 1 tablespoon smoked paprika (optional)
  • 1 teaspoon sugar
  • 1 teaspoon garlic powder

Instructions

  1. Place chicken in buttermilk. Refrigerate, covered, for 4 to 6 hours.
  2. Stir together flour, salt and pepper in a shallow bowl. Dredge chicken in flour mixture until well coated.
  3. In a separate bowl, combine all paste ingredients until well mixed. Microwave for about 15 seconds to make mixing easier, if desired. Set aside.
  4. Heat oil, about 4 inches deep, in a cast iron skillet to 350 degrees.
  5. Fry chicken, several pieces at a time, in oil until the temperature reaches 350 degrees. Using a spoon, immediately coat both sides of hot chicken with paste. The chicken will be very hot (temperature-wise), so use caution.
  6. Serve on white bread with sliced pickles to help curb the heat.
