Ingredients

  • 4 cups (1 pound) mild cheddar cheese, grated
  • ¾ cup mayonnaise
  • ½ cup diced pimentos, drained

Instructions

  1. Mix all ingredients in a medium-sized bowl. Refrigerate.
  2. Spread on bread to serve as a sandwich. If you want to doll it up, cut off the crusts and add alfalfa sprouts.

Tips & Notes

For a spicier version, substitute cheddar cheese with pepper jack and add a clove of crushed garlic.
