Cauliflower-Crusted Vegetable Quiche

Ingredients
Cauliflower Crust
- 1 head cauliflower, steamed and very finely chopped
- 1 egg
- 1 cup shredded mozzarella
- ½ cup grated Parmesan
- ½ teaspoon salt
- 1 teaspoon garlic, chopped
Filling
- 1 cup carrots, shredded
- 2 cups broccoli or broccoli rabe, steamed and cut into bite-sized pieces
- 2 cloves garlic, pressed
- 8 eggs, beaten
- ½ cup grated Parmesan
- 1 cup shredded mozzarella
- 1 teaspoon Italian seasoning
- ¼ cup mayonnaise
- ½ teaspoon salt
Instructions
- For the crust: Heat oven to 375 degrees.
- In a large bowl, combine all crust ingredients. Coat a 10-inch pie pan or quiche dish with cooking spray. Press crust mixture into dish. Bake for 20 minutes.
- For the filling: Combine all filling ingredients well in a large bowl. Spoon filling on top of partially baked crust. Bake for another 30 minutes or until set.
