Cauliflower-Crusted Vegetable Quiche

Use fresh cauliflower and broccoli in this filling, tasty quiche.

Ingredients

Cauliflower Crust

  • 1 head cauliflower, steamed and very finely chopped
  • 1 egg
  • 1 cup shredded mozzarella
  • ½ cup grated Parmesan
  • ½ teaspoon salt
  • 1 teaspoon garlic, chopped

Filling

  • 1 cup carrots, shredded
  • 2 cups broccoli or broccoli rabe, steamed and cut into bite-sized pieces
  • 2 cloves garlic, pressed
  • 8 eggs, beaten
  • ½ cup grated Parmesan
  • 1 cup shredded mozzarella
  • 1 teaspoon Italian seasoning
  • ¼ cup mayonnaise
  • ½ teaspoon salt

Instructions

  1. For the crust: Heat oven to 375 degrees.
  2. In a large bowl, combine all crust ingredients. Coat a 10-inch pie pan or quiche dish with cooking spray. Press crust mixture into dish. Bake for 20 minutes.
  3. For the filling: Combine all filling ingredients well in a large bowl. Spoon filling on top of partially baked crust. Bake for another 30 minutes or until set.
