Rosemary Citrus Shortbread Cookies

These herbed shortbread cookies can be decorated with frosting or topped with whipped cream.

Ingredients

  • 3¼ cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup butter (2 sticks)
  • 1½ cups sugar
  • 1 tablespoon lemon zest
  • 1 tablespoon orange zest
  • 1 tablespoon fresh ginger, finely grated
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh rosemary, chopped
  • 1 large egg

Instructions

  1. Preheat oven to 325 degrees.
  2. Sift together flour, baking powder and salt. Set aside.
  3. Cream butter and sugar in mixing bowl, then stir in zest, ginger, lemon juice, rosemary and egg until combined.
  4. Add flour mixture, and mix until dough comes together. Chill for at least one hour.
  5. Roll out dough to ½-inch thick, and cut out cookies into any shape using cookie cutters.
  6. Bake 20 to 25 minutes until the bottoms begin to brown.

Tips & Notes

Feeling fancy? These cookies make a great garnish for our Chocolate Pots de Creme. You can also decorate them with frosting or top with whipped cream.
