Warm Okra and Tomato Salad

Okra and tomatoes pair perfectly in this healthy warm salad.

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • ½ pound fresh okra, rinsed quickly in cold water and patted dry
  • 2 fresh tomatoes, cut into wedges (8 per tomato)
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons fresh basil, cut into ribbons (chiffonade)
  • ¼ teaspoon sea salt

Instructions

  1. Heat oil and butter over high heat.
  2. Add okra and saute until bright green, about 3-4 minutes. Add garlic and quickly stir to coat okra. Remove from heat.
  3. In a large bowl, stir warm okra with vinegar, salt, basil and tomatoes. Serve immediately.
