Ingredients
- 2 tablespoons olive oil
- 1 tablespoon butter
- ½ pound fresh okra, rinsed quickly in cold water and patted dry
- 2 fresh tomatoes, cut into wedges (8 per tomato)
- 2 cloves garlic, minced
- 2 tablespoons balsamic vinegar
- 2 tablespoons fresh basil, cut into ribbons (chiffonade)
- ¼ teaspoon sea salt
Instructions
- Heat oil and butter over high heat.
- Add okra and saute until bright green, about 3-4 minutes. Add garlic and quickly stir to coat okra. Remove from heat.
- In a large bowl, stir warm okra with vinegar, salt, basil and tomatoes. Serve immediately.
