Creamy Tomato Basil Soup

Classic creamy tomato soup gets its savory flavor from basil, garlic and onions.

Ingredients

  • 3 tablespoons olive oil
  • 1½ cups onion, chopped
  • 3 cloves garlic, minced
  • 1 (28-ounce) can crushed tomatoes
  • 2 (14.5-ounce) cans chicken broth (or homemade broth)
  • 1½ cups heavy cream
  • ½ cup chopped fresh basil
  • salt and pepper, to taste

Instructions

  1. Heat oil in pot over medium heat. Sauté onion and garlic in oil until soft, about 5 minutes.
  2. Add tomatoes and chicken stock, increase heat to high, and bring to a simmer.
  3. Reduce heat and simmer 20 minutes, stirring occasionally.
  4. Off heat, purée soup (can be puréed in the pot with an immersion blender.) Add cream, salt, pepper and chopped basil. Return soup to heat and serve immediately.

Tips & Notes

For a vegetarian version of this recipe, simply substitute the vegetable broth for the chicken broth, and add salt to taste.
