Ingredients
2 pounds beef stew meat
2 cups diced potatoes
1 Vidalia onion
2 cans diced tomatoes
1 pack sliced carrots
1 cup peas
1 cup corn
1 can V8 juice
1 teaspoon salt
1 teaspoon pepper
2 tablespoons ketchup
2 sticks margarine
Instructions
Mix ingredients in a 7-quart pot or slow cooker.
Bring stew to a boil, then reduce heat and cook at medium for 2 hours. If using a slow cooker, cook on high for 2 hours.
Finally, turn to low heat and simmer for 3 hours.
