Parmesan Onion Straws

Whether a crunchy topping or addictive snack, these onion straws will be gone in no time.

Ingredients

  • 2 large sweet onions, cut into thin strips (about 4 cups sliced)
  • 1 ½ cups low-fat buttermilk
  • 1 cup all-purpose flour
  • ¼ teaspoon cayenne pepper
  • 2 cups vegetable oil (for frying)
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • ½ teaspoon coarse salt
  • ¼ teaspoon black pepper

Instructions

  1. Prepare onions by slicing them in half. Use a sharp knife or mandolin to slice the onions into very thin strips.
  2. Place onion slices into a medium-size bowl. Pour buttermilk over onions and soak for 30 minutes.
  3. Meanwhile, in another medium-size bowl, combine the flour and cayenne pepper. Set aside. In a small bowl, combine the Parmesan, oregano, salt and pepper. Set aside.
  4. Heat vegetable oil to 375 degrees in a deep fryer or large skillet.
  5. Grab a handful of onion slices and toss into the flour mixture. Shake off excess flour.
  6. Plunge the coated onions into the oil and fry for about 3 minutes or until golden brown. Remove onions with a slotted spoon and drain on paper towels. Lightly sprinkle with Parmesan-oregano mixture. Repeat with remaining onion slices.

Tips & Notes

These onion straws make a perfect topping for green bean casserole, and you can prep them in advance – just store in the fridge for 3 to 5 days in a tightly sealed container. This recipe can also be used to make onion rings.
