Lemony White Bean Tuna Salad

Amp up bland tuna salad with beans, pepper, parsley and a zesty lemon mayonnaise.

Ingredients

  • 2 cans (24 ounces) water-packed albacore tuna
  • 2 cans (30 ounces) navy beans
  • 1 sweet red pepper, chopped
  • 1 cup fresh parsley, roughly chopped
  • 2 cloves garlic, pressed
  • ½ cup plain Greek yogurt
  • ⅓ cup mayonnaise
  • juice and zest of 1 small lemon
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Drain excess water from tuna. Drain and rinse beans.
  2. Combine all ingredients in a large serving bowl. Serve with whole wheat pita bread or as a sandwich filling. Try it on a bed of greens for a light supper.
