Ingredients

  • 1 chicken, turkey or duck carcass (doesn’t have to be picked clean)
  • 12 cups water, or enough to completely cover the bones
  • 1 bunch herbs (any combination of parsley, sage, thyme or rosemary)
  • 1 stalk celery, quartered
  • 2 carrots, quartered
  • 1 medium onion, quartered
  • 1 teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon sugar
  • 1 teaspoon cider vinegar

Instructions

  1. Place all ingredients in a large stockpot. Bring to a boil. Lower temperature and simmer for about 2 hours. Taste and adjust seasonings along the way. If the water begins to get low, add another cup or two.
  2. When the broth is rich in flavor and remaining meat falls off the bones, remove rom heat. Allow to cool and strain through a fine mesh strainer. Then do it again.
  3. Add the clear broth back to the stockpot and allow it to fully cool. Skim the fat off the top and store until ready to use.

Tips & Notes

This broth can be frozen for up to four weeks.
