Ingredients

- 1 stalk celery, quartered

- ¼ teaspoon red pepper flakes
- 1 teaspoon sugar
- 1 teaspoon cider vinegar
Instructions
- Place all ingredients in a large stockpot. Bring to a boil. Lower temperature and simmer for about 2 hours. Taste and adjust seasonings along the way. If the water begins to get low, add another cup or two.
- When the broth is rich in flavor and remaining meat falls off the bones, remove rom heat. Allow to cool and strain through a fine mesh strainer. Then do it again.
- Add the clear broth back to the stockpot and allow it to fully cool. Skim the fat off the top and store until ready to use.
