Orange-Roasted Tilapia

Ingredients
- 4 tilapia fillets (approximately 14 ounces)
- 1 teaspoon sea salt
- ½ teaspoon ground black pepper
- 4 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- 1 teaspoon orange zest
- 1 navel orange
Instructions
- Preheat oven to 375 degrees and line the inside of a baking sheet with parchment paper. Place the fillets on the baking sheet and sprinkle with salt and pepper.
- In a medium bowl, combine the melted butter, garlic and orange zest. Stir to combine, then pour over the fillets.
- Slice the orange into rings and arrange the slices around and on top of the fillets. Roast for about 15 minutes, or until opaque and flaky with an internal temperature of 145 degrees. Serve immediately.
