1. Chicken in the Waffle

2. Cotton Candy Taco

Why stick to traditional cotton candy at the fair when you could try a cotton candy taco? Winner of the “Most Creative” food award at the State Fair of Texas in 2018, the Cotton Candy Taco features a waffle cone “taco shell” filled with cotton candy and chocolate and topped with a sweet marshmallow glaze.

The Illinois State Fair takes food-on-a-stick options to the next level with these fried alligator skewers. Fairgoers say this Cajun-inspired snack tastes a lot like pork but with the texture of veal.
