Winter Savory (Satureja montana)

Don’t let the name fool you – winter savory actually flowers in mid to late summer. The small evergreen shrub has small pink flowers and most closely resembles thyme. The taste of this herb is most similar to a cross between sage and rosemary. When cooking with winter savory, it is best to add the herb in right at the end of cooking so the flavor remains strong and potent. The plant does best in sun or partial shade and grows anywhere from 6 to 12 inches tall and wide.
