Avocado Toast with Tomato, Cucumber and Dill

Take traditional avocado toast to the next level with this fresh summertime twist featuring tomato slices, cucumber and dill.

Ingredients

  • 2 ripe avocados
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • 1 small cucumber
  • 2-4 slices bread
  • 2 heirloom tomatoes, sliced
  • 1 tablespoon fresh dill, chopped

Instructions

  1. In a medium bowl, combine the avocados, lemon juice and salt. Mash together with a fork.
  2. Using a vegetable peeler, shave the cucumber into strips.
  3. Toast the bread and top each slice with the avocado mixture, tomatoes, cucumber and dill. Serve immediately.
