Belgian Yogurt Waffles with Strawberry-Rhubarb Syrup

Belgian Yogurt Waffles with Strawberry-Rhubarb Syrup make a delicious everyday breakfast or an elegant brunch. The waffles offer a healthy blend of white whole wheat flour and Greek yogurt.

Ingredients

Strawberry-Rhubarb Syrup:

  • 8 ounces (about 1 cup) fresh rhubarb, chopped
  • 8 ounces (about 1 cup) fresh strawberries, hulled and sliced
  • 2 tablespoons sugar
  • 2 tablespoons water
  • ½ teaspoon vanilla
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon fresh basil, chopped

Waffles:

  • 2 large eggs
  • 1 ¾ cups skim milk
  • ½ cup plain, fat-free Greek yogurt
  • 1 tablespoon maple syrup
  • 2 cups white whole wheat flour
  • 4 teaspoons baking powder

Instructions

  1. To make the syrup, place the rhubarb, strawberries, sugar, water, vanilla, cinnamon and basil into a large saucepan. Cook the mixture over medium heat for 10 minutes, or until the rhubarb and strawberries are soft. Place the rhubarb mixture into a blender and puree until smooth. Set aside.
  2. To make the waffles, coat a waffle iron with nonstick spray. In a large mixing bowl, whisk together the eggs, milk, yogurt and maple syrup.
  3. In a medium bowl, mix together the flour and baking powder. Pour the flour mixture into the egg mixture and stir until well combined and most of the lumps have disappeared.
  4. Cook the waffles according to the waffle iron manufacturer’s directions. Most waffle irons take about 3 to 4 minutes per waffle.

Tips & Notes

  • Make the syrup in advance and store it in the refrigerator for up to 3 days; reheat before serving.
  • If you don’t have rhubarb, you can double the amount of strawberries.
