Buffalo Tofu Bites

Ingredients

  • 14 ounces extra-firm tofu
  • 1 quart low-sodium vegetable broth
  • 3 tablespoons vegetable oil
  • ¼ cup hot sauce or any buffalo-style sauce
  • 12 celery ribs, trimmed, cut in half and split

Instructions

  1. Freeze the tofu at least 3 hours before you plan on preparing this dish.
  2. Place the frozen tofu in a saucepan and pour the vegetable broth over it until the tofu brick is submerged. Bring to a boil and cook for about 15 minutes, or until the tofu is thawed.
  3. Remove the tofu and place it on a paper towel-lined cutting board. Put a cutting board over the tofu and place a heavy cookbook or frying pan on top. Press for about 15 minutes to drain excess liquid. Cut the tofu brick into 2-inch cubes.
  4. Heat the vegetable oil in a skillet over medium-high heat. Once the oil is sizzling, add the tofu cubes and let them cook for about 5 minutes, or until golden brown and lightly crisped. Flip the tofu cubes and continue to do this on each side until the cubes are all golden brown and lightly crisp. This should take about 10 to 15 minutes.
  5. Transfer the tofu cubes to a large bowl. Add the hot sauce and toss to coat.
  6. Place the tofu cubes onto a serving platter and drizzle some of the Vegan Ranch Dressing over the top. Arrange the celery sticks on the platter; serve the extra dressing on the side.

Tips & Notes

Don’t be alarmed if the frozen tofu looks yellow. This is normal, and it will return to white once cooked.
