Cantaloupe, Basil and Prosciutto Salad with Balsamic Drizzle

Sweet cantaloupe pairs well with salty prosciutto in this elegant, six-ingredient appetizer that’s easy to throw together in no time.

Ingredients

  • 1 pound cantaloupe, thinly sliced
  • Juice of ½ a lemon
  • 2 tablespoons fresh basil, chopped
  • ¼ pound prosciutto, thinly sliced
  • 1 cup mozzarella pearls or balls
  • 1-2 tablespoons balsamic glaze

Instructions

  1. In a large bowl, toss cantaloupe slices with lemon juice.
  2. Transfer cantaloupe to a large platter and layer with basil, prosciutto and mozzarella.
  3. Drizzle with balsamic glaze before serving.
