Ingredients
- 1 ½ cup (3 sticks) unsalted butter, room temperature
- 1 pound sharp cheddar cheese, grated
- 4 cups self-rising flour
- 2 teaspoons onion powder
- 1 ½ teaspoons salt
- ½ teaspoon cayenne pepper
Instructions
- Preheat oven to 375 degrees and line 3 baking sheets with parchment paper.
- In a large bowl, combine all ingredients and mix by hand or with a mixer on low speed until well-combined. Spoon mixture into a cookie press or roll into 2-inch round logs.
- If using a cookie press, press out wafers directly onto the parchment-lined baking sheets, leaving about 2 inches between each wafer, and bake in 3 batches for 13 to 17 minutes, or until golden. If rolling into logs, refrigerate the logs for 1 hour before thinly slicing them into wafers. Arrange slices on the parchment-lined baking sheets and bake in 3 batches for 13 to 17 minutes, or until golden. Allow to cool completely.
- Store wafers in an airtight container at room temperature for about 2 weeks or freeze for up to 2 months.
