Cheesy Onion Dip with Green Bean Fries

No appetizer or potluck spread would be complete without a rich and creamy dip. This Cheesy Onion Dip pairs perfectly with a spread of fresh veggies and crackers – or take it to the next level with crispy Green Bean Fries for dipping.

Ingredients

Onion Dip:

  • 8 ounces (1 package) cream cheese
  • 8 ounces medium cheddar cheese, shredded
  • ¼ cup Swiss cheese, shredded
  • ¾ cup whole milk
  • 2 cloves garlic, minced
  • 2 tablespoons whole-grain mustard
  • 1 tablespoon hot sauce
  • 1 tablespoon dried chopped onions (or 1 teaspoon onion powder)
  • ½ teaspoon salt
  • 2-2 ½ cups fried onions

Green Bean Fries:

  • 8 ounces green beans, trimmed and washed
  • 2 tablespoons cornstarch
  • 1 egg
  • 3 tablespoons water
  • 1 ½ cups panko breadcrumbs
  • ¾ teaspoon salt
  • ¼ teaspoon cayenne

For Serving (optional):

  • Celery sticks
  • Carrot sticks
  • Crackers

Instructions

  1. In the bowl of a food processor, combine all onion dip ingredients except fried onions. Blend until smooth. Spread half the dip into the bottom of an oven-safe baking dish. Sprinkle half the fried onions over the top. Repeat layers with remaining dip and fried onions. Set aside.
  2. Preheat oven to 425 degrees and spray a baking sheet with cooking spray. Set aside.
  3. In a medium bowl, toss the green beans with cornstarch. In a separate medium bowl, whisk together the egg and water until foamy. In a third medium bowl, combine the panko, salt and cayenne. 
  4. Working in small batches, coat the green beans in the egg mixture, letting the excess drip off, then toss to coat in the panko mixture and place on the prepared baking sheet. 
  5. Bake the green beans and the cheese dip at the same time for 10 minutes. 
  6. Serve the onion dip warm alongside green bean fries, celery sticks, carrot sticks and/or crackers for dipping.
