Chicken Tostadas with Black Beans and Avocado

Ingredients
Tostadas:
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 ½ teaspoons salt, divided
- 2 cans (15 ounces each) black beans, liquid reserved from 1 can
- 3 cups chicken, cooked and shredded
- 2 tablespoons fresh lime juice (about 1 lime)
- 1 teaspoon chili powder
- 1 teaspoon granulated garlic
- 8 tostada shells
- 2 cups cheddar cheese, shredded
Avocado Sauce:
- 1 ripe avocado
- 1 cup fresh cilantro
- ¼ cup mayonnaise
- 1 jalapeno, stems and seeds removed
- 2 cloves garlic
- 2 tablespoons fresh lime juice (about 1 lime)
- ½ teaspoon salt
Optional Toppings:
- Fresh cilantro
- Pico de gallo
Instructions
- Heat oil in a skillet over medium-high heat. Add bell pepper and cook until slightly softened, about 3 to 5 minutes.
- Add 1 teaspoon salt, black beans and the liquid reserved from 1 can of beans. Cook for 5 to 10 minutes, or until beans have softened. Remove from heat and mash bean mixture with fork. Set aside.
- Preheat oven to 425 degrees. In a large bowl, combine the chicken, lime juice, chili powder, garlic and remaining ½ teaspoon salt. Toss to combine. Set aside.
- On a large baking sheet, layer each tostada shell with the bean mixture and top with the chicken mixture and shredded cheese. Bake for 5 to 10 minutes, or until cheese is melted.
- Meanwhile, prepare the avocado sauce. In a food processor or blender, combine all sauce ingredients and blend until smooth.
- Top each tostada with avocado sauce, fresh cilantro and pico de gallo, if desired. Serve immediately.
