Cranberry Orange Cookies

Ingredients
Cookies:
- 2 cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 tablespoon orange zest
- ½ cup unsalted butter, room temperature
- 1 cup sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1 tablespoon freshly squeezed orange juice
- 1 cup fresh cranberries, chopped
Glaze:
- 1 cup powdered sugar
- 4-5 tablespoons freshly squeezed orange juice
Instructions
- Preheat oven to 350 degrees and line a cookie sheet with parchment paper or a silicone baking mat.
- In a medium bowl, whisk together the flour, baking soda, salt and orange zest.
- In a separate bowl, use a hand or stand mixer to cream the butter and sugar together until combined and fluffy. Add the egg, vanilla and orange juice and mix until thoroughly combined.
- With the mixer on low speed, mix in the dry ingredients in two batches until combined. Turn off mixer and stir in the cranberries by hand.
- Drop the cookie dough by heaping tablespoon about 1 inch apart on the prepared cookie sheet. Bake for 15 to 20 minutes, or until the edges are golden. Transfer the cookies to a wire rack to cool.
- While cookies are cooling, prepare the glaze. In a medium bowl, combine the powdered sugar and orange juice and stir until no lumps remain. Drizzle over the cooled cookies before serving.
