Cranberry Orange Cookies

Ingredients

Cookies:

  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon orange zest
  • ½ cup unsalted butter, room temperature
  • 1 cup sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon freshly squeezed orange juice
  • 1 cup fresh cranberries, chopped

Glaze:

  • 1 cup powdered sugar
  • 4-5 tablespoons freshly squeezed orange juice

Instructions

  1. Preheat oven to 350 degrees and line a cookie sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together the flour, baking soda, salt and orange zest. 
  3. In a separate bowl, use a hand or stand mixer to cream the butter and sugar together until combined and fluffy. Add the egg, vanilla and orange juice and mix until thoroughly combined. 
  4. With the mixer on low speed, mix in the dry ingredients in two batches until combined. Turn off mixer and stir in the cranberries by hand.
  5. Drop the cookie dough by heaping tablespoon about 1 inch apart on the prepared cookie sheet. Bake for 15 to 20 minutes, or until the edges are golden. Transfer the cookies to a wire rack to cool.
  6. While cookies are cooling, prepare the glaze. In a medium bowl, combine the powdered sugar and orange juice and stir until no lumps remain. Drizzle over the cooled cookies before serving.
