Greek Kabobs (Chicken, Pork or Beef)

Choose your favorite protein for a batch of Greek Kabobs on or off the skewers. Chicken, pork and beef all work well in this recipe served alongside greens, tomatoes, cucumbers, Kalamata olives and homemade tzatziki. Don’t have time to thread skewers? Roast the meat directly on the baking sheet to simplify prep.

Ingredients

For the Meat:

  • 2 tablespoons extra-virgin olive oil
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 pound meat of choice (boneless skinless chicken breast, pork tenderloin or beef sirloin), cut into bite-size pieces

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • ½ cup cucumber, grated and squeezed to remove excess water
  • 2 cloves garlic, minced
  • Juice of ½ lemon
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon fresh dill, chopped
  • Salt, to taste
  • Pepper, to taste

To Assemble:

  • 4-5 cups spring greens
  • 2 cups grape tomatoes, halved
  • 1-2 cups cucumbers, sliced
  • 1 cup Kalamata olives
  • ½ cup red onion, thinly sliced
  • ½ cup feta cheese, crumbled

Instructions

  1. For the meat: Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the oil, lemon juice, garlic, oregano, thyme, salt and pepper. Add the meat and toss to combine, making sure to coat each piece. Thread the seasoned meat onto 4 metal skewers and lay skewers on the prepared baking sheet (or place meat directly on the baking sheet in a single layer if you don’t have skewers).
  3. Bake for 20 to 25 minutes or until meat is cooked through (reaching an internal temperature of 165 degrees for chicken or 145 degrees for pork and beef).
  4. For the sauce: While the meat cooks, whisk together all sauce ingredients in a medium bowl. Set aside until ready to serve.

To assemble: On a large serving platter, arrange the cooked kabobs, greens, tomatoes, cucumbers, olives, red onion, feta and tzatziki. Serve immediately.
