Greek Salad Pizzas

Lighten up your next pizza night with fresh Greek Salad Pizzas. Whole-wheat pita bread forms the base for classic Greek salad ingredients like greens, tomatoes, olives and feta. Bake for just five minutes and your mini pizzas are ready to serve.

Ingredients

  • 4 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • ¼ teaspoon garlic powder
  • ½ teaspoon dried basil
  • 4 whole-wheat pita breads
  • 4 heaping cups baby spinach
  • ¼ cup cherry tomatoes, thinly sliced
  • 2 tablespoons Kalamata olives, thinly sliced
  • 8 tablespoons tomato-and-herb feta cheese (or regular feta cheese)
  • 4 teaspoons Parmesan cheese, shredded

Instructions

  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
  2. In a small bowl, whisk together the oil, vinegar, garlic powder and basil.
  3. Place the 4 pitas on the prepared baking sheet. Brush the oil mixture onto each pita.
  4. Top each pita with a handful of spinach, 1 tablespoon sliced tomatoes, 1 ½ teaspoons sliced olives, 2 tablespoons feta and 1 teaspoon Parmesan.
  5. Bake for about 3 to 5 minutes or until the spinach is wilted and the cheese is melty. Serve immediately.
