Grilled Peach Crumble

Grilled Peach Crumble is the perfect way to finish off any cookout menu. Grilling fresh peach halves adds a delicious, caramel-like flavor to the favorite summertime fruit. You can prepare the oat and pecan topping in advance, then serve your peaches warm topped with crumble and a scoop of vanilla ice cream.

Ingredients

  • ½ cup all-purpose flour
  • ½ cup rolled oats
  • ½ cup chopped pecans
  • 3 tablespoons brown sugar
  • ½ teaspoon ground cinnamon
  • ½ cup (1 stick) cold unsalted butter, cubed
  • 1 teaspoon vanilla extract, divided
  • 4 large ripe peaches, pitted and halved
  • 2 tablespoons unsalted butter, melted
  • 1 quart vanilla ice cream, for serving (optional)

Instructions

  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper and set aside.
  2. In a medium bowl, stir together the flour, oats, pecans, sugar and cinnamon. Add the cubed butter and ½ teaspoon vanilla extract. Using a pastry cutter or fork, cut the butter into the dry mixture until evenly combined in small clumps and crumbles. Spread mixture onto the lined baking sheet and bake until crumbles are golden and crisp, about 15 to 20 minutes. Set aside.
  3. Preheat grill to medium-high. Arrange the peaches on a plate cut-side up.
  4. In a small bowl, stir together the melted butter and remaining ½ teaspoon vanilla extract. Brush peaches with the melted butter mixture.
  5. Place peach halves on the grill cut-side down. Grill, without flipping, until the peaches are charred on the cut side but not mushy, about 3 minutes. Remove peaches from the grill and place in serving bowls. Top each peach half with the prepared crumbles and a scoop of vanilla ice cream, if desired. Serve immediately.

Tips & Notes

You can store extra crumbles in an airtight container for up to a week.
