Key Lime Greek Yogurt Pie

Key Lime Greek Yogurt Pie tastes similar to a fluffy cheesecake. The filling gets a healthy boost from the Greek yogurt blended with reduced-fat cream cheese. Short on time? Take a shortcut and use a store-bought graham cracker crust.

Ingredients

Crust:

  • 1 ½ cups graham cracker crumbs (about 12 full sheets)
  • ⅓ cup sugar
  • 6 tablespoons unsalted butter, melted

Filling:

  • 1 envelope (about 1 ½ teaspoons) unflavored gelatin
  • ½ cup Key lime juice, divided
  • 8 ounces reduced-fat cream cheese, softened
  • 1 cup plain, fat-free Greek yogurt
  • ½ cup sugar
  • 2 tablespoons lime zest
  • Key lime slices (optional)
  • Whipped cream (optional)

Instructions

  1. To prepare the crust, preheat oven to 350 degrees. In a small bowl, combine the graham cracker crumbs, sugar and melted butter.
  2. Pour the crumb mixture into a 9-inch pie pan; spread evenly and press firmly over the bottom and slightly up the sides. Bake the crust for 10 minutes. Remove from the oven and set aside to cool.
  3. Meanwhile, prepare the filling. In a small, microwave-safe bowl, stir together the gelatin and 2 tablespoons of Key lime juice until moist. Add the remaining Key lime juice and warm everything in the microwave for 30 seconds, being careful not to let it boil. Remove and stir until the gelatin is dissolved.
  4. In the bowl of a mixer, combine the cream cheese, yogurt, sugar, and lime zest and beat until smooth. Add the gelatin mixture and mix well, about 1 to 2 minutes.
  5. Pour the filling into the cooled graham cracker crust and chill in the refrigerator for at least an hour before serving. Garnish with Key lime slices and whipped cream, if desired.
