Macaroni and Cheese Squares

What could be better than mac and cheese you can eat with your hands? Macaroni and Cheese Squares offer all the delicious flavor of the traditional dish in a fun, handheld package that’s perfect for tailgating and other pack-and-go potlucks.

Ingredients

  • 16 ounces elbow pasta, cooked according to package instructions
  • 32 ounces shredded sharp cheddar cheese, divided
  • 6 tablespoons butter
  • 6 tablespoons all-purpose flour
  • 6 cups milk
  • 2 teaspoons onion powder
  • 1 teaspoon nutmeg
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat oven to 350 degrees and grease a 9-by-13-inch, deep-sided baking dish with cooking spray. 
  2. Place half the cooked pasta in the baking dish. Sprinkle 2 cups of cheese over the top. Top with remaining pasta.
  3. In a medium saucepan, melt butter and whisk in flour. When mixture begins to sizzle and brown, whisk in the milk, onion powder, nutmeg, salt and pepper. Stir gently and constantly until thickened. Add remaining cheese and stir until thick and velvety.
  4. Spoon cheese sauce evenly over the top layer of pasta in the baking dish. Bake for 35 minutes. Allow macaroni and cheese to cool to room temperature, then cover and refrigerate 8 hours or overnight.
  5. To serve, slice macaroni and cheese into 12 squares. Serve at room temperature or slightly warm.

  1. Distribute the cheese sauce evenly on the top layer of pasta in the baking dish.
