Mango Sorbet with Chili and Lime

Ingredients

  • 2 ½ pounds very ripe mangoes
  • 1 cup water
  • 1 cup sugar
  • ¼ cup light corn syrup
  • 2 limes, zested and juiced
  • ¼ teaspoon kosher salt
  • ¼ teaspoon cayenne pepper (or to taste)

Instructions

  1. Peel and remove the flesh from the mangoes. Place mango flesh in a blender and puree completely. Transfer puree to a medium bowl and set aside. (You should have about 2 ½ cups puree.)
  2. In a small saucepan, combine the water, sugar, corn syrup, lime zest, lime juice, salt and cayenne pepper. Bring the mixture to a boil over high heat while stirring occasionally, about 5 minutes.
  3. Once sugar has melted, remove from heat and whisk into mango puree. Chill in the refrigerator until completely cool, about 45 minutes to 1 hour.
  4. Pour mixture into the base of an ice cream maker and churn according to manufacturer’s instructions for about 10 to 15 minutes until frozen. Scoop sorbet into an airtight container and freeze for at least 4 hours before serving
