Beef and Bean Stuffed Peppers with Cheese

Ingredients

  • 3 bell peppers
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can (15 ounces) black beans, drained and rinsed
  • 2 cups cheddar cheese, shredded

Optional Toppings:

  • Guacamole
  • Fresh jalapeno
  • Fresh cilantro

Instructions

  1. Preheat oven to 425 degrees and grease a 9-by-13-inch baking dish.
  2. Halve the bell peppers and remove the seeds. Brush peppers with oil and sprinkle with salt. Place in the prepared baking dish cut-side down and roast for 15 minutes.
  3. While peppers are roasting, heat a large skillet over medium heat. Cook the beef and drain off any excess fat. Add the taco seasoning, black beans and ½ cup water. Simmer for 3 to 5 minutes.
  4. Flip the peppers over and generously fill with the beef mixture. Top each pepper with cheese and bake for 15 to 20 minutes, or until peppers are tender and cheese is melted. Serve immediately.
