Oven Braised Short Ribs
These hearty Oven Braised Short Ribs make a delicious dinner the whole family will love. Serve them alongside potatoes, vegetables, rice or risotto for a complete meal.

Ingredients
- 3 pounds bone-in beef short ribs
- 2 teaspoons salt
- 1 tablespoon olive oil
- ½ yellow onion, chopped
- 3 cloves garlic, minced
- 2 celery stalks, chopped
- 3 large carrots, cut into 4 parts
- 1 cup beef broth
- ½ cup red wine
- 2 sprigs rosemary
- 1 bay leaf
- Mashed potatoes, rice and/or roasted vegetables, for serving
Instructions
- Preheat oven to 350 degrees.
- Pat short ribs dry and sprinkle generously with salt.
- Heat a large Dutch oven over medium-high and add oil. Once the oil is hot, sear short ribs for 1 to 2 minutes on the side with the meat. (You don’t need to sear the side with the bone.) Transfer ribs to a plate.
- Add the onion, garlic, celery and carrots to the Dutch oven and saute for 2 to 3 minutes. Return ribs to the Dutch oven and add the broth, wine, rosemary and bay leaf.
- Place the lid on the Dutch oven and transfer to the oven to braise for 2 to 2 1/2 hours, or until the ribs are tender.
- Remove from oven, remove bay leaf and serve warm alongside mashed potatoes, rice and/or roasted vegetables.
