Oven Braised Short Ribs


These hearty Oven Braised Short Ribs make a delicious dinner the whole family will love. Serve them alongside potatoes, vegetables, rice or risotto for a complete meal.

Ingredients

  • 3 pounds bone-in beef short ribs
  • 2 teaspoons salt
  • 1 tablespoon olive oil
  • ½ yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 celery stalks, chopped
  • 3 large carrots, cut into 4 parts
  • 1 cup beef broth
  • ½ cup red wine
  • 2 sprigs rosemary
  • 1 bay leaf
  • Mashed potatoes, rice and/or roasted vegetables, for serving

Instructions

  1. Preheat oven to 350 degrees.
  2. Pat short ribs dry and sprinkle generously with salt.
  3. Heat a large Dutch oven over medium-high and add oil. Once the oil is hot, sear short ribs for 1 to 2 minutes on the side with the meat. (You don’t need to sear the side with the bone.) Transfer ribs to a plate.
  4. Add the onion, garlic, celery and carrots to the Dutch oven and saute for 2 to 3 minutes. Return ribs to the Dutch oven and add the broth, wine, rosemary and bay leaf.
  5. Place the lid on the Dutch oven and transfer to the oven to braise for 2 to 2 1/2 hours, or until the ribs are tender.
  6. Remove from oven, remove bay leaf and serve warm alongside mashed potatoes, rice and/or roasted vegetables.
