Ingredients

  • 1 cup sugar
  • 1 cup brown sugar
  • 3 tablespoons corn syrup
  • ½ cup heavy whipping cream
  • 4 tablespoons unsalted butter
  • ¼ teaspoons baking soda
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt
  • 2 cups pecans, chopped

Instructions

  1. In a heavy-bottom pot, combine the sugars, corn syrup, whipping cream, butter and baking soda. Using a candy thermometer, cook the mixture over medium-low heat, stirring frequently, until the caramel reaches 235 to 238 degrees.
  2. Remove from heat and quickly add the vanilla, salt and pecans. Stir for about 5 minutes, or until the caramel starts to thicken.
  3. Scoop the mixture out onto parchment paper to form pralines and let set for about 30 minutes.
  4. Serve pralines immediately or store in an airtight container.
