Puff Pastry Tart with Goat Cheese and Tomato

Topped with juicy tomato slices and an herbed goat cheese spread, these tasty puff pastry tarts make an easy appetizer that’s perfectly portioned for your next get-together.

Ingredients

  • 1 sheet puff pastry, thawed
  • ½ teaspoon salt
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 10 ounces herbed goat cheese
  • ½ cup sour cream
  • 1 pound fresh tomatoes, sliced

Instructions

  1. Preheat oven to 425 degrees and line a baking sheet with parchment paper.
  2. Unfold the puff pastry sheet and use a knife to cut down the folds so you have 3 sections of pastry. Cut these sections into thirds to make squares. Using a knife, score each square about ¼ inch from the edge of the dough, then use a fork to poke holes in the middle of the pastry. Place pastry squares on the prepared baking sheet and bake for 10 minutes.
  3. Meanwhile, combine the salt, olive oil and garlic in a small bowl. Remove the crusts from the oven and brush with the garlic and olive oil mixture. Return to the oven for an additional 5 minutes or until browned. Let cool completely.
  4. In a large bowl combine the goat cheese and sour cream and mix with a hand or stand mixer until combined and fluffy. Spread the goat cheese mixture on each tart and top with tomato slices. Serve immediately.
