Salted Peanut Banana Pudding

Salty roasted peanuts and sweet bananas make the perfect pair in this Salted Peanut Banana Pudding layered with crunchy vanilla wafers, creamy pudding and fresh banana slices.

Ingredients

  • 1 can (14 ounces) sweetened condensed milk
  • 1 cup water
  • 1 box (3.4 ounces) instant vanilla pudding
  • 1 cup heavy cream
  • 1 box vanilla wafers
  • ½ cup roasted salted peanuts, chopped
  • 4 medium bananas, sliced
  • Whipped cream, for garnish (optional)
  • Extra peanuts, for garnish (optional)

Instructions

  1. In a large bowl, whisk together the milk and water. Add the pudding and whisk or mix with a hand mixer to thoroughly combine.
  2. Cover pudding mixture with plastic wrap and chill in the refrigerator for 1 to 2 hours, or until completely cold.
  3. Add cream to a large bowl with a hand or stand mixer and beat until stiff peaks form. Add whipped cream to the chilled pudding and fold the cream into the pudding until no streaks remain.
  4. To assemble the pudding, prepare 4 jars or juice glasses. Add 4 crushed vanilla wafers to the bottom of each glass, then layer each with 1 tablespoon peanuts, half a sliced banana and about ⅛ of the pudding mixture.
  5. Repeat the layers in the same order using 2 crushed vanilla wafers for the first layer, followed by 1 tablespoon peanuts, half a sliced banana and about ⅛ of the pudding mixture.
  6. Top each serving with whipped cream and more peanuts, if desired. Serve immediately.
