Santa Hat Brownie Bites

Santa Hat Brownie Bites are a fun holiday food project the kids can help out with. Simply cut your homemade brownies into bite-size circles, pipe a little frosting and top with a strawberry Santa hat.

Ingredients

Brownies:

  • ½ cup dark chocolate chips
  • ¾ cup almond butter (the only ingredient should be almonds)
  • ½ cup sugar
  • ¼ cup neutral cooking oil
  • 1 teaspoon vanilla extract
  • 2 eggs, room temperature
  • ⅓ cup oat flour
  • ⅓ cup unsweetened cocoa powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoons milk

Santa Hats:

  • ½ cup unsalted butter, room temperature
  • 1-2 cups powdered sugar
  • 32 ounces strawberries, cleaned and stems removed

Instructions

  1. Preheat oven to 350 degrees and line a 9-by-13-inch baking dish with parchment paper.
  2. In a small saucepan over low heat, melt the chocolate chips until smooth. Set aside to cool.
  3. In the bowl of a stand mixer fitted with paddle attachment, combine the almond butter, sugar and oil and mix until smooth and creamy. Add the cooled chocolate and vanilla and mix to combine, then mix in the eggs.  
  4. In a separate medium bowl, combine the oat flour, cocoa powder, baking soda and salt. Slowly add the flour mixture to the wet ingredients and mix until thoroughly combined. If the mixture seems too thick, add milk 1 tablespoon at a time.
  5. Pour batter into the prepared baking dish and smooth into an even layer. Bake for about 13 to 15 minutes, or until a toothpick inserted in the center comes out clean. Allow brownies to cool completely before removing from the pan.
  6. Meanwhile, prepare the frosting. In the bowl of a stand mixer, cream together the butter and 1 cup of powdered sugar. Taste for desired sweetness and add more sugar to taste if desired.
  7. When brownies are cool, use a small cookie or biscuit cutter to cut brownies into bite-size circles. Use a piping bag (or zip-close bag with a small hole cut in one corner) to pipe frosting around the top edge of each brownie. Place a strawberry on top with the flat side touching the frosted brownie. Pipe a dot of frosting on top of the strawberry to create the pom on the end of the hat. Continue until all brownie bites have been decorated.
