Ingredients

  • 1 store-bought pie crust
  • 12 ounces semi-sweet chocolate
  • 2 cups heavy whipping cream, divided
  • 2 tablespoons sugar
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon flaked salt (such as Maldon)

Instructions

  1. Bake pie crust according to package instructions. Set aside to cool.
  2. In a microwavable bowl, combine chocolate and 1 cup of the cream. Microwave the mixture on high, stirring every 30 seconds, until the chocolate melts (about 2 minutes). Whisk until very dark and creamy.
  3. Using a rubber spatula, scrape the chocolate mixture into the cooled crust and refrigerate for 1 hour.
  4. In a large bowl, whip the remaining cream until stiff. Whisk in the sugar, cocoa powder and vanilla extract. Once the mixture forms peaks, spoon it into a pastry bag and squeeze dollops around the edge of the pie.
  5. Sprinkle flaky salt on top and refrigerate until ready to serve. Serve slightly chilled.
