Sesame Chicken and Broccoli

Need an easy dinner you can throw together in a flash? Sesame Chicken and Broccoli is the answer. While the rice cooks and broccoli steams, whip up a simple orange sesame sauce for the chicken, cook until browned and serve it all up in one bowl.

Ingredients

  • 1 cup white rice, uncooked
  • 5 cups broccoli florets
  • ½ cup bone broth
  • ⅓ cup fresh orange juice (about 1 orange)
  • 2 tablespoons orange marmalade
  • 2 tablespoons low-sodium soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon sesame oil
  • 4 tablespoons cornstarch, divided
  • 1-1 ½ pounds boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • Salt, to taste
  • Pepper, to taste
  • 3 tablespoons olive oil
  • 1 teaspoon sesame seeds, plus more for garnish
  • 1 green onion, chopped

Instructions

  1. In a large saucepan, combine the rice with 2 cups water. Cook rice according to package directions.
  2. While rice is cooking, fill a pot with 2 inches of water and place a steamer basket inside. Place broccoli inside the steamer basket and bring water to a boil over high heat. Reduce heat to medium, cover pot, and steam broccoli for about 5 minutes, or until tender and bright green.
  3. In a small bowl, whisk together the broth, orange juice, marmalade, soy sauce, vinegar, garlic, ginger, sesame oil and 1 tablespoon cornstarch. Set aside.
  4. Season chicken with salt and pepper and sprinkle with remaining 3 tablespoons cornstarch. Toss to evenly coat.
  5. Heat olive oil in a large skillet over medium heat. Add the chicken and cook, stirring occasionally, until golden brown, about 8 minutes. (Depending on the size of your pan, you may need to work in batches.)
  6. Add the broth mixture to the skillet with the chicken and stir until thickened, then stir in the sesame seeds.
  7. Divide rice between 4 serving bowls. Top each serving with chicken and broccoli. Garnish with green onion and more sesame seeds if desired. Serve immediately.
