Ingredients

  • 2 green baby zucchini (about 6 inches each), grated
  • 2 yellow baby zucchini (about 6 inches each), grated
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons fresh basil, thinly sliced (optional)
  • ¼ cup Parmesan cheese, freshly grated (optional)

Instructions

  1. Add all ingredients to a medium mixing bowl and toss to combine.
  2. Serve immediately at room temperature or chill in the refrigerator until ready to serve.

Tips & Notes

Cook’s Note: No baby zucchini or yellow zucchini available? Just use 2 regular-sized green zucchini in this recipe.
