Ingredients
- 2 green baby zucchini (about 6 inches each), grated
- 2 yellow baby zucchini (about 6 inches each), grated
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 2 tablespoons fresh basil, thinly sliced (optional)
- ¼ cup Parmesan cheese, freshly grated (optional)
Instructions
- Add all ingredients to a medium mixing bowl and toss to combine.
- Serve immediately at room temperature or chill in the refrigerator until ready to serve.
Tips & Notes
Cook’s Note: No baby zucchini or yellow zucchini available? Just use 2 regular-sized green zucchini in this recipe.
