Fresh Strawberry Pie

Ingredients

  • 1 frozen deep-dish pie crust
  • 2 pounds fresh strawberries, divided
  • ½ cup plus 2 tablespoons water, divided
  • 1 cup sugar
  • 2 tablespoons lemon juice
  • 3 tablespoons cornstarch
  • Whipped cream, for garnish (optional)

Instructions

  1. Cook frozen pie crust according to package instructions.
  2. In a blender or food processor, combine ½ pound strawberries and ½ cup water. Blend until smooth.
  3. Pour strawberry puree into a saucepan. Add sugar and lemon juice and stir to combine.
  4. In a small bowl, mix together cornstarch and 2 tablespoons water. Slowly add to the saucepan with the strawberry puree.
  5. Heat strawberry puree over medium and let simmer for 5 to 8 minutes, or until mixture has thickened and reduced some. Remove from heat and let cool for 5 to 10 minutes.
  6. In a large bowl, add the remaining 1 ½ pounds strawberries. Pour the cooled strawberry mixture over the top and use a spatula to coat all the berries.
  7. Pour filling into the cooked crust and chill pie in the refrigerator for 3 to 4 hours, or until completely set and chilled. 
  8. Garnish pie with whipped cream just before serving, if desired.

Tips & Notes

This pie is best when eaten the same day you make it.
