Sweet and Sour Cherry Chicken Lettuce Wraps
Looking for a light bite? Our Sweet and Sour Cherry Chicken Lettuce Wraps feature chicken stir-fried in peanut oil seasoned with ginger and a DIY sweet-and-sour sauce. Toss in chopped fresh cherries, shredded carrots, diced green onions and sliced almonds and serve it wrapped in bibb or Boston lettuce leaves.

Ingredients
- 2 tablespoons rice vinegar
- 2 tablespoons reduced-sodium teriyaki sauce
- 1 tablespoon honey
- 1 tablespoon peanut oil
- ¾ pound boneless, skinless chicken breasts, cut into ¾-inch cubes
- 1 teaspoon ground ginger
- ½ teaspoon coarse salt
- ¼ teaspoon black pepper
- 1 ½ cups shredded carrots
- 1 ¼ cups fresh sweet cherries, pitted and coarsely chopped
- 4 green onions, chopped
- ⅓ cup sliced almonds
- 8 bibb or Boston lettuce leaves
Instructions
- In a small bowl, whisk together the vinegar, teriyaki sauce and honey until combined. Set aside.
- Heat the peanut oil in a large skillet over medium-high heat. Add the cubed chicken and sprinkle with ginger, salt and pepper. Stir-fry the chicken for 5 minutes or until cooked through and no longer pink.
- Add the carrots, cherries, green onions and almonds and continue stir-frying for 1 minute. Add the prepared sauce and stir-fry 1 more minute or until everything is warmed through.
- Top each lettuce leaf with about ⅛ of the chicken mixture. Fold the lettuce over the filling to create a wrap and serve immediately.
Tips & Notes
Feel free to substitute any type of nuts for the almonds.
