Sweet and Sour Cherry Chicken Lettuce Wraps

Looking for a light bite? Our Sweet and Sour Cherry Chicken Lettuce Wraps feature chicken stir-fried in peanut oil seasoned with ginger and a DIY sweet-and-sour sauce. Toss in chopped fresh cherries, shredded carrots, diced green onions and sliced almonds and serve it wrapped in bibb or Boston lettuce leaves.

Ingredients

  • 2 tablespoons rice vinegar
  • 2 tablespoons reduced-sodium teriyaki sauce
  • 1 tablespoon honey
  • 1 tablespoon peanut oil
  • ¾ pound boneless, skinless chicken breasts, cut into ¾-inch cubes
  • 1 teaspoon ground ginger
  • ½ teaspoon coarse salt
  • ¼ teaspoon black pepper
  • 1 ½ cups shredded carrots
  • 1 ¼ cups fresh sweet cherries, pitted and coarsely chopped
  • 4 green onions, chopped
  • ⅓ cup sliced almonds
  • 8 bibb or Boston lettuce leaves

Instructions

  1. In a small bowl, whisk together the vinegar, teriyaki sauce and honey until combined. Set aside.
  2. Heat the peanut oil in a large skillet over medium-high heat. Add the cubed chicken and sprinkle with ginger, salt and pepper. Stir-fry the chicken for 5 minutes or until cooked through and no longer pink.
  3. Add the carrots, cherries, green onions and almonds and continue stir-frying for 1 minute. Add the prepared sauce and stir-fry 1 more minute or until everything is warmed through.
  4. Top each lettuce leaf with about ⅛ of the chicken mixture. Fold the lettuce over the filling to create a wrap and serve immediately.

Tips & Notes

Feel free to substitute any type of nuts for the almonds.
