Warm Broccoli Three-Pepper Salad

Many broccoli salads are heavy on the mayonnaise and bacon, but this flavorful version combines steamed broccoli with bell peppers for flavor and color.

Ingredients

  • 1 medium head broccoli, chopped into bite-size pieces
  • ½ each red, yellow and orange bell peppers, diced
  • ½ cup toasted slivered almonds
  • ½ cup canola oil
  • 1/3 cup cider vinegar
  • 2 cloves garlic, minced
  • 3 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • Dash of cayenne pepper

Instructions

  1. Steam broccoli until al dente. In a large bowl, toss steamed broccoli with bell peppers and almonds to combine.
  2. In a saucepan over medium heat, combine all remaining ingredients and stir constantly until mixture is thickened. Pour over vegetable and nut mixture and toss to coat well. Serve immediately.
