Warm Broccoli Three-Pepper Salad
Many broccoli salads are heavy on the mayonnaise and bacon, but this flavorful version combines steamed broccoli with bell peppers for flavor and color.

Ingredients
- 1 medium head broccoli, chopped into bite-size pieces
- ½ each red, yellow and orange bell peppers, diced
- ½ cup toasted slivered almonds
- ½ cup canola oil
- 1/3 cup cider vinegar
- 2 cloves garlic, minced
- 3 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1 teaspoon salt
- Dash of cayenne pepper
Instructions
- Steam broccoli until al dente. In a large bowl, toss steamed broccoli with bell peppers and almonds to combine.
- In a saucepan over medium heat, combine all remaining ingredients and stir constantly until mixture is thickened. Pour over vegetable and nut mixture and toss to coat well. Serve immediately.
