Warm Cabbage Apple Slaw with Lemon Honey Dressing

Ingredients
Veggies:
- 1 small head red cabbage
- 2 medium granny smith apples, cored (not peeled)
- 1 teaspoon seasoning salt
- 1 tablespoon olive oil
- 2-3 cups fresh baby spinach
Dressing:
- 1 teaspoon lemon zest
- ¼ cup lemon juice
- ¼ teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoon honey
- ¼ cup olive oil
Instructions
- Preheat oven to 400 degrees. Cut the cabbage and apples into bite-sized pieces and place in a medium mixing bowl. Add olive oil and seasoning salt and toss to combine. Spread the mixture out on a large baking sheet and roast for 15 minutes.
- To prepare the dressing, place all dressing ingredients in a small bowl and whisk to combine.
- Pour the dressing over the warm cabbage and apples. Add spinach and toss to coat evenly and slightly wilt the spinach. Serve immediately.
