Warm Cabbage Apple Slaw with Lemon Honey Dressing 

Added spinach amps up the nutrients and look of this quick and healthy winter slaw.

Ingredients

Veggies:

  • 1 small head red cabbage
  • 2 medium granny smith apples, cored (not peeled)
  • 1 teaspoon seasoning salt
  • 1 tablespoon olive oil
  • 2-3 cups fresh baby spinach

Dressing:

  • 1 teaspoon lemon zest
  • ¼ cup lemon juice
  • ¼ teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoon honey
  • ¼ cup olive oil

Instructions

  1. Preheat oven to 400 degrees. Cut the cabbage and apples into bite-sized pieces and place in a medium mixing bowl. Add olive oil and seasoning salt and toss to combine. Spread the mixture out on a large baking sheet and roast for 15 minutes.
  2. To prepare the dressing, place all dressing ingredients in a small bowl and whisk to combine.
  3. Pour the dressing over the warm cabbage and apples. Add spinach and toss to coat evenly and slightly wilt the spinach. Serve immediately.
