Warm Wilted Winter Greens with Honey-Balsamic Dressing

Pile greens like Swiss chard, radicchio and escarole on a platter to create a flavorful Warm Wilted Winter Greens with Honey-Balsamic Dressing. Top with toasted walnuts, dried cranberries and shaved Parmesan. According to some studies, eating walnuts may help reduce the risk of heart disease.

Ingredients

  • ½ cup walnuts, coarsely chopped
  • 10 ounces assorted winter greens (such as Swiss chard, radicchio or escarole), washed, stemmed and torn into pieces
  • ¼ cup balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon whole grain mustard
  • ½ cup olive oil
  • ½ cup dried cranberries
  • ¼ cup Parmesan cheese shavings

Instructions

  1. Preheat oven to 350 degrees. Arrange the walnuts in a single layer on a rimmed baking sheet. Roast for 10 minutes, stirring occasionally, until golden. Remove from the oven and let cool until ready to use.
  2. Pile the winter greens on a serving platter. Set aside.
  3. In a large saute pan, combine the vinegar and honey. Cook over medium-high heat for about 5 minutes. Stir in the mustard, then whisk in the oil.
  4. Pour the warm dressing over the winter greens. Add the cranberries and walnuts and toss gently until the greens are coated in the dressing and slightly wilted. Garnish with Parmesan shavings.

Tips & Notes

You can roast the walnuts in advance and store them in an airtight container in the refrigerator for up to a month.
