Brown Butter Pecan Cookies

Rich and nutty brown butter is the secret ingredient in Brown Butter Pecan Cookies. Cooking your butter for a few minutes until brown before mixing the cookie dough together allows it to develop a complex, caramel-like flavor that pairs perfectly with the warm vanilla, cinnamon and pecans in this decadent recipe.

Ingredients

  • 1 cup (2 sticks) unsalted butter
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 3 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¾ teaspoon salt
  • 2 cups pecans, chopped

Instructions

  1. In a medium skillet, melt the butter over medium heat, stirring frequently.
  2. Continue stirring for another 5 to 8 minutes. Butter will begin to foam and sizzle, then start to turn a golden color as the sizzling slows. Watch closely until you see brown bits starting to form and the butter smells toasted and nutty. Remove from heat immediately and pour the brown butter into a heatproof bowl. Let cool to room temperature.
  3. In a large bowl with a hand or stand mixer, mix together the brown butter and both sugars until combined. Add the eggs and vanilla and continue mixing until combined.
  4. In a small bowl, whisk together the flour, baking soda, cinnamon, salt and pecans. Add to the butter mixture and continue mixing until just combined. Cover bowl with plastic wrap and chill dough in the refrigerator for 1 hour.
  5. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  6. Scoop dough in heaping tablespoons (preferably with a cookie scoop) onto the baking sheet, spacing about 2 to 3 inches apart.
  7. Bake for 10 to 12 minutes or until cookies are slightly browned around the edges. Transfer cookies to a wire rack to cool before serving.

  2. Made these cookies yesterday and my grandkids loved them. Followed recipe exactly and 11mins edges were brown. Browning the butter is a game change. Just the right amount of sweet. Will be making these again. Delicious!
